Frugal Friday: Freezer Burritos

When I look for recipes to try, I have 3 basic requirements:

  1. They have to be easy – I don’t have time to spend hours in the kitchen unless the yield is going to net me a full freezer!
  2. They have to be freezer-friendly – I’m a bulk cooker at heart.  I like making a LOT of something, freezing in individual or family-size meal portions, and being able to pull something out for a super-quick lunch or dinner
  3. They have to meet some standard of frugality – I admit that this standard changes at times.  I’m not looking for every meal I make to come out to a few cents a serving.  But I do need to know that I have meals that I can make even when money is tight. And I like to make meals with all the great managers specials from Kroger and the wonderful deals at my scratch and dent store. Continue reading

Frugal Friday:
Chili Cheeseburger Casserole

Have I mentioned that I love saving money? I am almost addicted to the thrill of a great deal, so much so that I have to consciously ask myself “Do you NEED this?” before buying stuff on sale/clearance. I go shop the Managers Specials rack at my local Kroger on an almost-daily basis. No, I’m not crazy, but Kroger is right around the corner from my daycare, so it’s pretty easy and convenient.  Plus, that way I can stock up on items that we use a lot, which makes my menu planning and bulk cooking easier (and way less expensive!). My morning (or anytime) pick-me-up: The Java Chiller

So I’ve been Fuel Cycling on Trim Healthy Mama for the past week,and it’s been great! Comparing my weights for the 1st vs. 8th day, I’m down 3.8 pounds! That is huge for me, since I’m generally a turtle whose weight moves super-slow. I attribute part of my success to this luscious drink that I concocted to make it through the week. I call it The Java Chiller.
