Summer Sides: Faux-tato Salad
I’ve mentioned before that in the heat of Texas summers, I want to keep my kitchen cool, especially in the middle of the day. That means that I’m constantly looking for summer-friendly recipes, that require no cooking, or only stove-top cooking, or cooking overnight in a crockpot. Today I’m sharing with you my new favorite summer side: Faux-tato salad.

Not one for the backyard (though fresh raw milk would be excellent!). One for the freezer. And really, only part of one for the freezer. But right now, I’m not sure we could fit in a single hoof! A couple weeks ago I did a huge freezer clean-out and organization, along with a big inventory list so that I knew what was lurking in the back. I have sort of half-heartedly been using up a few things, but I haven’t stopped buying things to add to my stock. Now it’s time to get serious about it! Perfect timing to join the Summertime Pantry Challenge over at Good Cheap Eats!

Mijo y su español
I’m participating in Spanish Friday over at Latinaish today. English translation is at the bottom, below the picture of that beautiful little boy.
Mi hijo piensa que habla Español. Lo que digo yo es que él sabe el español de Dora. Sabe “ven” y “ayudame” y los numeros, pero casi nada mas. Pero piensa que sí sabe el español. Un día una mujer estuvo hablando con P-Daddy sobre cuales idiomas hablaban. Ella dijo que hablaba el chino. P-Daddy respondió que él tambien hablaba el chino. El Pooh interrumpió para decir “Yo hablo el español. Mira? uno…dos…tres…cuatro…cinco…seis…siete…ocho…nueve…diez!”

My Satisfying “Sundae”
As the weather heats up, I’m constantly looking for a quick treat that is delicious, satisfying, and won’t heat up my kitchen. In years past, ice cream fit the bill, but I’m really trying to avoid that road to larger clothing sizes this year. Trim Healthy Mama is helping with this, and this treat fits the guidelines for an S (= Satisfying) meal or snack with no problem. I call it a “sundae” but there’s no ice cream involved, just yummy greek yogurt. And some additional toppings that you might typically see on a sundae. It’s super-easy to put together and is my go-to when my boys are enjoying their ice cream cones.

Firecrackers, Food, and the Fourth
It’s a holiday week here, and we are feeling like a holiday since we have sort of a coldfront coming through – we are only supposed to be in the 80′s or very low 90′s this week, people – that’s a definite reason to celebrate!
