I admit that it’s been hard to get back in the swing of things with school so far – that might be because we started on a Thursday and the kids didn’t start until today. But we had a great first day of school! Pooh and Tigger both have the same teacher, but one goes to morning Pre-K and the other to afternoon, which will give the two of them a break from each other. And maybe things will not be quite so crazy in the evenings and I’ll get things together and get organized! Planning out my week in advance really helps, so here we go… Continue reading
Lemon Pepper Wings
I’ve been a fan of Wingstop for years. Their fries are, hands-down, the best in the world (with the exception of the ones hand-cut and fried by my awesome daddy!), and their wings are just incredibly tasty.
Now, I’m not a huge fan of spicy wings. They are OKAY, but what really floats my boat (and increases my waistline) are their lemon pepper wings. They are so yummy, so greasy, so finger-lickin’ good, and well, I have been telling myself that they are also Trim Healthy Mama-friendly. Continue reading

On the Road with THM
Next week, our daycare is closed. Have I mentioned that we LOVE our daycare provider? She’s incredible – great with the kids, totally down to earth, and doesn’t put up with their intended shenanigans. And we found her on Craigslist, yes, yes we did. I know, I know, safety, and common sense, and blah blah blah. We called and talked, went by and visited and had a nice long interview with her, watched her interact with the kids, and decided to give it a chance. Best move we’ve made, lemme tell you! Peaches and Cream Oatmeal
Ever since I was a little girl, one of my favorite desserts has been peach pie. With chocolate ice cream. Don’t wrinkle your nose like that until you try it – it is fabulous!
Anyway, I love peach pie, but the sugar and carbs make it a pretty rare treat for me these days. But it’s that time of year now. You know the time I mean. The time when fresh peaches abound and they call your name as you walk by in the grocery store. Not too long ago I took a drive through Georgia and saw a ton of places where I could have stopped and bought a bushel or two of peaches. I resisted. But I knew I couldn’t resist forever, so I started thinking about THM-friendly ways to enjoy one of my favorite summer treats. This is what I finally came up with:
