Wrapping up January!

This coming week had not even really started and it already promises to be busy busy busy, so I’ve spent the day in the kitchen trying to make sure that I am prepared. So far I’ve made the following:

Making my plan

Last week was tough, let me tell you! It was the first week of classes, and I was busy and didn’t plan my menu and week out well.  By Wednesday, I was already exhausted, and then both Wednesday and Friday were close to 12-hour work days. Friday was busy too, plus we had a social event that evening that we could not skip. I was T.I.R.E.D!! As I think back over the week, I know that my biggest mistake was simply not planning my menu and food for the week. When I don’t eat well, my energy goes way down, and it gets even worse as I try for some quick fixes to get my energy back up. So this week, a PLAN is definitely in order if I’m going to successfully make it through the week.

Happy 2014 – I am back!

You may have noticed that the blog has been sitting here unminded for a few weeks months.  My wonderful dad passed away, and blogging moved way way down my list of priorities.  But I’m definitely feeling the lack of planning and really need to get back on track and get a few things done, so I thought I’d better plan a bit if I’m to have a successful and productive semester! Planning for Fuel Cycle Success

I know, I keep mentioning Trim Healthy Mama, and I’ve posted a bunch of Fuel Cycle menus, but I haven’t really taken the time to talk about the Fuel Cycle and what it does for me. The Trim Healthy Mama Fuel Cycle is a week where we try to shake things into gear in terms of weight loss.  It’s not for beginners, or even for ladies who are consistently losing, but instead was created for those with stubborn weight that are stalling and not losing.  As a Turtle who loses, on average, no more than 0.2 pounds a week, I do a Fuel Cycle every couple months to shake things up.  And it works. I lose anywhere between 2 and 7 pounds anytime I do a Fuel Cycle! Now I’m working on keeping it off in between Fuel Cycles! Continue reading

Where has the time gone?!

I’m freaking out a bit about the fact that October is half over and I still have TONS to do – I have no idea where the time has gone!  But I’m forcing myself to sit back, focus a little, and make a plan. A really strong cup of coffee in my hand really helps with that ;-)

Frugal Friday: Freezer Burritos

When I look for recipes to try, I have 3 basic requirements:

  1. They have to be easy – I don’t have time to spend hours in the kitchen unless the yield is going to net me a full freezer!
  2. They have to be freezer-friendly – I’m a bulk cooker at heart.  I like making a LOT of something, freezing in individual or family-size meal portions, and being able to pull something out for a super-quick lunch or dinner
  3. They have to meet some standard of frugality – I admit that this standard changes at times.  I’m not looking for every meal I make to come out to a few cents a serving.  But I do need to know that I have meals that I can make even when money is tight. And I like to make meals with all the great managers specials from Kroger and the wonderful deals at my scratch and dent store. Continue reading

Ever have those moments when you waited just a bit too long to eat and you are wondering if you should pour ketchup or mustard on your arm before you start chewing on it (mustard is way more THM-Friendly, by the way!)? You know, the times when even the thought of the wait in a drive-thru line is just too much? This Drive Thru Sue is all too familiar with that feeling and it drives me NUTS!

Fall is Finally here!

Frugal Friday:
Chili Cheeseburger Casserole

Have I mentioned that I love saving money? I am almost addicted to the thrill of a great deal, so much so that I have to consciously ask myself “Do you NEED this?” before buying stuff on sale/clearance. I go shop the Managers Specials rack at my local Kroger on an almost-daily basis. No, I’m not crazy, but Kroger is right around the corner from my daycare, so it’s pretty easy and convenient.  Plus, that way I can stock up on items that we use a lot, which makes my menu planning and bulk cooking easier (and way less expensive!).
